The aim of the present work was to study the performance of fortified pied de cuve (FPdC) prepared by addition of wine. Effect of Different Modified Atmosphere Packaging on the Quality of Mulberry Fruit (Morus alba L. cv Kokuso 21)

The control of temperature and gas composition is essential to maintain the fresh flavor and quality of perishable fruits like mulberry. This study presented a modified atmosphere experiment (MAP) for fresh fruit showing the potential benefits of innovative gas mixing with argon. The effects of MAP were studied on the physicochemical and qualitative attributes of mulberry preserved at4±1°C and90±5%R.H. Fruit Quality Traits of Six Ancient Apple (Malus domesticaBorkh) Cultivars Grown in the Mediterranean Area

ABSTRACTToday, ancient cultivars have been considered obsolete and replaced, leading to a dramatic loss of genetic diversity. In this trial we examined the quality of the six ancient apple cultivars: Bommino, Gelato, Miliadeci, Rotolari, Turco, and Virchiata. Fruit was submitted to the determination of physicochemical traits and a sensory profile was defined by a trained panel using 20 attributes. We also detected biometric data using a specific descriptor list. Obtained data showed interesting physicochemical and sensory traits among the observed cultivars. ‘Rotolari’, ‘Bommino’, and ‘Gelato’ should be used in breeding programs and revaluated for a placement on specific local markets.

The effect of the addition of different protein sources on the sensory properties of meat products was evaluated. Pork liver pâte, turkey patties, cooked turkey breast, fresh pork sausages, and marinated turkey breast were elaborated with soybean (control), and other protein sources, such as aspea, lentil, bean, Chlorella, Spirulina, and dairy protein.
